Bush Ingredients We Love (and How We Use Them)

Native bush foods have been nourishing our people for tens of thousands of years. They hold stories, medicine, and deep knowledge passed down through generations. Today, we’re proud to bring those ingredients into our kitchen in respectful, meaningful ways — blending traditional wisdom with modern recipes to create food that’s both delicious and culturally grounded.


Here are a few of our favourite native ingredients, and how we use them:


Lemon Myrtle

With its strong citrus aroma and flavour, lemon myrtle is one of the most versatile bush ingredients in our kitchen. We use it to season roast veggies, add a zing to salad dressings, and even infuse it into desserts like panna cotta or baked slices. Its fresh, vibrant profile brings a bright lift to both savoury and sweet dishes.


Wattleseed

Earthy, nutty, and rich — wattleseed is a flavour powerhouse. We love adding it to baked goods like muffins, breads, and cookies, where it adds depth and a subtle coffee-like flavour. It also works beautifully in spice rubs for meats and vegetables, and can be brewed into a warming tea or added to hot chocolate for a uniquely Aussie twist.


Quandong

Also known as the native peach, quandong is a tart and tangy fruit rich in vitamin C. We often make a bright chutney or compote with quandong to serve alongside roast meats or cheese boards. It’s also a beautiful addition to sauces, jams, or even crumbles — balancing sweetness with a citrusy edge.


Finger Lime

We call it "lime caviar" for good reason — these tiny pearls burst with fresh, zesty flavour. Finger limes add a pop of texture and acidity to seafood dishes, salads, and dressings. We also love using them as a garnish on desserts, where they bring both beauty and balance.


Saltbush

Saltbush has a naturally salty, umami flavour that works well in so many ways. We use it as a seasoning for roasted nuts, sprinkle it on savoury baked goods, and incorporate it into herb blends for marinades and rubs. It’s a great way to add depth to a dish without overpowering other flavours.
